A new setting in the Site Manager > Site Configuration on the Email tab allows for the user to setup a Default Email Address for a Site that can then be used in various email template address fields.
The new option can be seen in the screen below.
The purpose of the Default Email Address is to be used as any to or from address in an email template. To set an email to utilize the Default Email Address, you can include the replacement tag [defaultemail] as the value of any to or from address field.
